Today, we’re trying out a new recipe from Naïma’s book “9 Months at the Table”: Nutty Delight Cake. This ultra-soft cake is perfect for the preconception period thanks to its numerous nutritional benefits.

Why is this recipe perfect for preconception?
According to the book, nuts are an excellent source of healthy fats, proteins, fibers, minerals, and antioxidants. They are known to increase sperm count and motility due to their vitamin E content. This vitamin not only improves sperm quality but also helps women produce the necessary hormones for conception.
Ingredients for 8 servings:
- 3 eggs
- 60 g of whole sugar
- 50 g of olive oil
- 150 g of hazelnuts (or hazelnut powder)
- 100 g of almonds (or almond powder)
- 1.5 tsp of baking powder
- 60 ml of plant-based milk

Preparation:
- Preheat the Oven: Preheat your oven to 180°C (350°F).
- Prepare the Eggs: Separate the egg whites from the yolks. Beat the egg whites with a pinch of salt until they form stiff peaks.
- Mix Egg Yolks and Sugar: In another bowl, whisk the egg yolks and sugar for 2-3 minutes, then add the olive oil.
- Add the Nuts: Grind the nuts (hazelnuts and almonds) and add them to the mixture along with the baking powder. Then, pour in the plant-based milk and mix until you get a smooth batter.
- Fold in the Egg Whites: Gradually and gently fold the egg whites into the batter with a spatula.
- Bake: Pour the batter into a 20 cm (8-inch) diameter cake pan. Bake for 25 minutes.
- Finish: Let it cool and sprinkle with powdered sugar before serving.
